Penley Estate Steyning Cabernet Sauvignon is grown on Coonawarra's unique terra rossa earth: red topsoils over a bed of soft, free draining limestone.
These mineral rich, free draining soils coupled with Coonawarra's cold winters and long, cool ripening season allow the grapes to ripen slowly and fully.
The wine is named after Steyning in England, the birthplace of Christopher Rawson Penfold who founded Penfolds with his wife Mary Penfold in 1844. Kym, Ang and Bec Tolley, who brought Penley Estate to life in 1988, are their descendants.
Fermentation takes place in headed down open fermenters. The wine is matured in predominantly seasoned French oak barrels for 24 months before spending a further six months in stainless steel before bottling.
Deep crimson purple, Penley Estate Steyning Cabernet Sauvignon has layers of dark fruits, toasty French oak and savoury tannins. Cellaring potential is 10 years.
